Egg Tagliatelle with Truffle

In 1991 the first pasta in the world to be made with truffles was created in a Tartufanghe workshop. Tagliolini and Tagliatelle pasta is the regional pasta of Piedmont in Italy. It is made with durum wheat and pasteurized eggs (24%). Completely hand-made, the pasta is hand-stretched on wooden frames and then slow-dried to give it its special texture. This pasta contains a very low moisture content (7-8%).
